Längst ist klar, dass die vielfach beklagten Krisen -vom Klimawandel über die Wirtschafts-und Finanzkrise bis hin zu den bereits absehbaren Konflikten um Öl, Wasser, Boden und Nahrungsmittel -durch das Festhalten an bisherigen Entwicklungspfaden verschärft, aber nicht überwunden werden. Dennoch bleiben Wachstum und technisch verstandener Fortschritt, wiewohl seit 40 Jahren in ihrer sozialen und ökologischen Problematik erkannt und beschrieben (Meadows 1972), das nahezu unangefochtene Leitbild der gegenwärtigen ökonomischen, politischen und administrativen Eliten (Crouch 2011). Auch in weiten Teilen der Wissenschaft gelten alternative, nachhaltige Formen des Wirtschaftens, die einen deutlich geringeren Ressourcenverbrauch, mehr Zeit-und Lebensqualität bei weniger Wachstum und solidarische Maßstäbe anstelle von Gewinn maximierende in Aussicht stellen, als unrealistische und letztlich auch nicht wünschbare Vorstellungen ökologischer Spinner. Entsprechend einseitig fasst die gegenwärtige EU-Kommissarin für Forschung, Wissenschaft und Innovation, Máire Geoghegan-Quinn, anlässlich des ersten Jahrestags der EU-Innovation-Union die Grundüberzeugung der EU-Staaten und ihrer "2020-Strategie" zusammen als "need to innovate to get Europe back on the path to growth" (Geoghegan-Quinn 2011).

Anyone concerned about food risks related, for example, to acrylamide, bovine spongiform encephalopathy (BSE) or food supplements is confronted with vast and complex landscapes of political debates, with various uncertainties, contested responsibilities, competing knowledge and ambivalent value‐making. In risk assessment procedures, these fluid complexities often get simplified to come to any evaluation at all. A retrospective review of risk scandals, however, highlights that most risks arise just from those connections in production, usage and disposal which remained unseen or were even blinded out during previous risk assessment. To better deal with these ‘unknown unknowns’, society at large and decision‐makers in particular need not only new strategies to avoid manufactured uncertainties but also more comprehensive knowledge tools and concepts to fully explore potential sources and connections of hazards, risks and uncertainties. Facing this challenge of risk governance, the paper discusses the potential of the visualisation (‘mapping’) of risk controversies and introduces the concept of ‘risk infrastructures’. The aim is to equip stakeholders, laypersons and decision‐makers with risk mappings which make visible how competing knowledge claims, protagonists, institutional settings, facts and values are related to each other. It will do so in referring to a prototype software application of such a ‘re‐assembling strategy’ (Actor‐Network‐Theory (ANT)) called ‘Risk Cartography’.

Wie sieht es mit den Ernährungsarrangements Älterer aus, mit ihren Möglichkeiten und Grenzen der Gestaltung dieser Ernährungsarrangements? Diese Frage motiviert sich zum einen aus einem generellen Interesse an den Lebensstilen von Älteren, und zwar vor dem Hintergrund von gesellschaftlich immer pluraler werdenden Sinnwelten, dank derer Tradition und Routine auch im dritten Lebensalter nicht (mehr) umstandslos vorausgesetzt werden dürfen. Sie motivierte sich im vorliegenden Fall zum anderen aus der Frage, inwieweit es überhaupt möglich ist, die in Routinen verstetigten und auch identifikatorisch habitualisierten Ernährungsstile gezielt zu verändern, insbesondere unter dem Leitbild „nachhaltiger Ernährungsmuster“1.

of (sub-) political debates about risks. The societal actor is confronted with complexity and dynamics of contradictory knowledge making in expertise and media reports. The term "Systemic Risk" aims especially on dynamics and changeability of risks that call for new institutional handling. In our transdisciplinary project (risk-cartography.org) we developed a prototype for internet based, visual representation ("mapping") of risk-related controversies and material transformations (risk-cartographies). These representations can be explored from different perspectives following individual interests and concerns of users. The prototype contains maps for two case-studies (food-supplements and nanoscale materials) which show protagonists, things and arguments and focus on their (formally unseen) relations.

Nowadays, the failure of sustainable consumption and the failure to slow the depletion of resources are due not to the unavailability of sustainable products or services 1 , but to their inadequate diffusion, i.e. poor market penetration and take-up of sustainable alternatives. In terms of consumption, there are two dimensions to inadequate diffusion: either there is insufficient demand for sustainable products and services, i.e. they have not penetrated the mass market and remain niche -or they are in demand, but are not perceived as true alternatives to non-sustainable options, i.e. instead of replacing traditional products and services, they represent additional consumption options, thereby causing the dreaded rebound effect. 2

The paper discusses the contribution and the functions of scientific experts in risk communication and consumer counselling under conditions of a ‘world risk soci- ety’. It investigates how scientific advice is formulated on the exemplary issue of food supplements which are becoming a part of everyday life, although risk experts assess them to be unnecessary and sometimes even risky. The paper especially reconsiders various modes of how the risk of food supplements is communicated in modernity. It argues that in Second Modernity (scientific) experts in consumer counselling have to develop new modes of reflexivity in order to open up multifac- eted dialogues between science, public and regulation in a wider context.

Rinderwahnsinn (BSE) und Maul- und Klauenseuche (MKS), die großen Risikoskandale der Jahre 2000/01, haben im Agrarbereich zu einer massiven Erschütterung und Infragestellung industriemoderner Routinen und Selbstverständnisse geführt. In der Folge geriet der gesamte Bereich unter erheblichen Veränderungs-und Legitimationsdruck, den die rot-grüne Regierungspolitik als »window of opportunity« nutzte, um einen politischen Paradigmenwechsel, die »Agrarwende« , anzukündigen. Diese »tief greifende Neuorientierung« wurde vom Kanzler, seiner Ministerin und dem Mediendiskurs als mit der Krise fällig gewordene Öffnung eines bis dato abgeschirmten Bereiches für die Notwendigkeiten (ökologischer) Modernisierung dargestellt. The paper provides a deeper insight into institutionally given opportunities for and limitations to reflexive, dialogue-centered, and risk-sensitive knowledge exchange between scientific experts and agro-political decision makers, especially under the conditions of a significant degree of complexity, far-reaching uncertainties and potential impacts. It focuses on the practical orientations, guiding expectations and selection criteria shaping expertise in processes of science policy consulting. In doing so, two perspectives will be discussed: first the orientation of the knowledge production process by different concepts of ''usable knowledge.'' Second, the influence of specific constellations on different stages of the political process, which shape the institutional conditions for the transfer and the use of scientific knowledge within the policy consulting process. Both perspectives help to come to a closer understanding of the demanding and very heterogeneous process of science policy consulting, which -if successful -leads to the interactive production of a very special form of ''orientational knowledge.''

Elitist, technical, and positivist models of scientific governance have been subject to much scrutiny and criticism by science and technology studies (STS) for many years. Seminal work in STS has exposed the boundary work through which the distinctions between science and nonscience, science and politics, and experts and lay people are constructed and maintained (to mention only a few: Gieryn 1999; Latour 1993; Nowotny, Scott, and Gibbons 2001). A more specific tradition in STS has focused on the relations between science, technology, public policy, government and civil society, and has articulated demands for the acknowledgment of uncertainty and a self-critical stance toward scientific truth claims (Wynne 1993; Collins and Evans 2007), for a broader participation of citizens or lay people
