Innovation involves learning and alignment of various activities: research, production, sourcing, distribution and marketing. Many actors are involved in it: company R&D departments, operators, plant managers, general management, marketing people, users, researchers in the public sector. Statistical offices have only counted investments in end-of-pipe technologies. This is due to methodological problems of separating cleaner production measures from investments in non- environmental technologies (Sprenger, 2004). Therefore, data on the use of cleaner production technologies have hardly ever, if at all, been included in official environmental statistics thus far. Although international statistical offices, such as the OECD and Eurostat , agreed to add cleaner production to environmental protection activities, official international statistics on the use of cleaner production technologies are still unavailable. For example, the ECOTEC (2002) report on the EU Eco-industries, their employment and export potential still focuses on end-of-pipe technologies.

start to finish but, rather, were multiple and constantly developing - diverging, converging, and ultimately cohering into new ideas. Outcomes gave rise to spin-off ideas and projects. The people in the innovation journey did not resemble a single entrepreneur leading a fixed set of people over time but, rather, were a fluidly forming and loosely bounded group with multiple members taking a variety of different roles over time. Transactions did not take place in an orderly and prespecified manner but among an expanding and contracting network of stakeholders. The context was not a static backdrop providing opportunities for innovation but a subjective enacted reality that both supported and constrained the innovation process. Finally, the process was not simple and cumulative but consisted of many divergent, parallel and convergent paths, some related, others not (Table 1.) There exist few studies of innovation journeys of eco-innovations. But we can expect that the above insights pertain largely also to eco-innovations. herein lies our pedagogical innovation—we believe that it is valuable to involve architecture students in simulations of generative processes that result in collabora- tively designed urban proposals. the infinite inflections of a limited number of archetypes tends to be considered from a more objective or rational perspective, while cultural tradition and the zeitgeist provide a contextual framework in terms of social norms and rules. Emotion tends to be associated with the highly subjective, personal realm of aesthet- ics, but we contend it is mainly the result of the biological adaptation of our species to our environment. Emotion has the strength to bias even the most rational of decisions, and so it plays a much greater role in architecture and urbanism than is generally acknowledged. Figure 1. After the collective site appropriation workshop, students found themselves at an impasse. The limited land owned by each team had to be subdivided into individual house lots, which this time required negotiation based on very schematic house design iterations in order to visualize each property’s livability within a projected context of high urban density. This led to relational dynamics in which team strength, at first imperative rather than dialogi- cal, outperformed that of individuals. VlUUI9 FIOJeCcl VULCOITCG The collective site appropriation workshop was a day-long event in which four teams were each supplied with ten wooden stakes, 755 feet of boundary tape, and a sledgehammer for claiming their plot of land. Teams then assembled at a starting line for the “race.” The rules of engagement were read out loud and a starting signal sounded, after which teams charged up the hill to claim their plots of land. Due to the limited space of the entire site and the incentive on the part of every team to claim as much land as their perimeter tape permitted, boundaries between teams had to be agreed on through on-site negotiation and compromise. After plots of land were claimed, all four teame aeeemhbiled at 4 flat area

The studio made apparent the conflict between architec- tural individualism and collective questions of altruism and empathy, demonstrating how resilience and a capacity to negotiate are vital for the overall success of an urban architec- tural project.

With 375 people opening the survey link, 205 starting and 128 completed surveys, meaning a completion rate of 62.44%, achieved in two months online, with an average time to complete of around 8 minutes. As Figure 2 shows, the largest representation was from Brazil, with 71.6% of respondents, followed by Switzerland with 15.3%, followed by France and Spain with 1.6%, with USA and UK with 1.1%. Rest of the world with 0.6%

As per eating out habits, over 90% of respondents usually eat out for lunch or dinner, as seen on Figure 8, and 85.7% prefer eating inside the restaurant versus taking out. As per weekly eating out frequency, 49.4% eat “once in a while” or “half of the time”. As per 2.7% “other” replies, two stated eating out every lunch, and dinner out half of the week, and another for every breakfast and lunch, with more details on Figure 9.

This sustainability issue means a lot to me (produced by the author, 2019) When it comes to personal importance of sustainability issues, as seen on Figure 11 education also takes the lead, followed by clean water and health, with gender equality being the least important in respondents’ perception. The standard deviation is 0.17, variance 0.03 and an average of 4.27 points out of a total possible of 5.

Table 1. Regional share of expenditure in eating out (Cushman & Wakefield, 2017) By country, the market share of eating out expenditure is led by the USA with 22%, followed by China (8%), and India (5%), with 8 countries having 53% of the market share and 151 countries sharing the remain (ibidem). The USA expenditure is growing year over year (Statista, 2018), as possible to see on Figure 1. Flattening the curb during the 2008 crisis but given economic activity decrease at the time the industry has a rather stable size.

It was used as a logit model with a Nelder-Mead Simplex algorithm (Nelder & Mead, 1965). Considering: The following question block were six questions following the discrete choice model standard (Manksi, 1977), where respondents had to choose one between 4 combinations variables, plus a non-applicable. Table 4 shows three variable blocks, the concepts, and it was randomly selected one for each, as to mimic a real combination for restaurant choice, and given the 4 options, plus the non-applicable.
