Collard is a group of loose-leafed cultivars of Brassica oleracea, a plant species comprising many other common vegetables, including cabbage and broccoli. Part of the Acephala group (or the "kale group"), collard is also classified as the variety B. oleracea var. viridis. It is grown as a food crop for its large, dark green, edible leaves, which are cooked and eaten as a vegetable. It has been cultivated as food since classical antiquity.
